One day I decided to go for it and make a pot of creamy potato soup. Now, I'm not really famous for creating new recipes, but this one turned out great so I thought I'd share it with you!
INGREDIENTS
3 medium russet potatoes
8 oz no salt chicken stock
1 T. dried minced onion
1/2 tsp celery seed
1/2 tsp Mrs. Dash table blend
Dash garlic powder
2 T. Unsalted butter
2/3 cup fat free milk
1 T. Cornstarch
1/4 cup reduced fat sour cream
Sprinkle of salt
1. Peel and dice potatoes. In a saucepan, bring stock and minced onion to a boil. Add potatoes and cool until soft, about 10 minutes.
2. Once cooked, mash potatoes into a creamy texture, leaving a few chunks. Add butter, Mrs. Dash and garlic powder. Mix cornstarch into cold milk and stir into potatoes. Stir in sour cream. If it's too thick, add a little more milk.
3. Sprinkle a little salt to taste. Garnish with cheese and bacon if desired.
